I am sure there are good Mexican restaurants in Louisville, but the only one I been to was the Ernesto's, on Shelbyville road. Stay away from it! The food is poor and bland, and personally, I would rather eat at Taco Bell, which I really don't like either. The only thing Ernesto's is good for is the cheap beer at Happy Hour, but the waiters are so busy then and you'll have to wait for a long tome. I wouldn't recommend it for mexican food lovers.
